
The best part of baking is watching people enjoy what you have made. The next best part is searching for a new recipe online, looking at mouthwatering photos and thinking of ways to modify the recipes to make them your own. One of my favorite sites is
Oatmeal Cookie Guy. He has come up with tons of recipes for oatmeal cookies, from
Chocolate and Sea Salt to
Cherry-Lemon Joy. Every batch of cookies from this site has gotten rave reviews and is a unique taste. This week I made his
stuffed red velvet, a favorite of my co-workers. I always seem to have leftover frosting so I decided to try an experiment with it. I had some strawberries from my farm share and some graham crackers for baking so I decided to make some cheesecake strawberries. They turned out super delicious.
Cheesecake Strawberries
Wash and remove the core of the strawberries (I used 1 and ½ green baskets).
Stuff with Cream Cheese Frosting (3 oz Cream Cheese, 1/8 cup powdered sugar, ½ tsp vanilla).
Crush graham crackers into a fine powder and dip the top of the strawberry into the powder.
